My family tends to spend a lot of time outdoors during the summer months. We belong to a local Lake community and spend hours there during the week, where the kids fish and swim and just play with their friends. As a result, I was looking for an easy and quick lunch that I take with us and warm up in the pavilion microwave.
I stumbled upon a recipe for Pizza Pockets and with some tweaking I think I have found the perfect lunch! I made a huge batch of these the other day and experimented with ham and cheese filling and pepperoni, cheese and sauce filling and while both were very yummy my family preferred the pepperoni, cheese and sauce. I really think that these could be made with really any type of filling you like, however, so experiment and see what you enjoy.
Dough
2 Tbsp Active Dry Yeast
2 cups warm water
2 tsp sugar
2 tsp salt
4 tbsp olive oil
5 -6 cups of flour ( I used both regular white flour and whole wheat flour in mine)
To make dough using a stand mixer, add sugar, salt, oil and 5 cups flour to bowl. Add yeast and water and mix well until dough pulls away from sides of bowl. Add more flour as necessary. To make pizza pockets divide dough into small balls (makes about 20), roll out flat, fill with filling choices, fold over and seal edges tightly.
Bake at 450 degrees for approximately 15 minutes, until brown. Allow to cool and eat or place in freezer bags and freeze. When you are ready to eat them just microwave them for approximately 45 sec-1 minute.
