After taking a summer hiatus for the Tried and True Tuesday feature we are back this week with a family favorite of ours, Chicken and Rice Stir Fry.
This recipe is super easy and quick and is perfect for those weeknights where you are running around and don’t have a lot of time to fuss and get dinner on the table. It is actually a recipe that I came up with as a complitlation of a couple of different recipes.
Stir-Fry Sauce
3 tablespoons Soy Sauce
1 tablespoon Oyster Sauce (use Soy Sauce if you don’t have Oyster Sauce)
1 tablespoon rice vinegar or white vinegar
t teaspoon sugar
1/4 tsp olive oil
Other ingredients
Bell peppers
finely chopped carrots
garlic
olive oil
Brown or white rice
Cut one pound of chicken into strips and brown in a pan with a little bit of oil. Remove chicken to another plate and slowly cook garlic, being careful to not burn. Add finely chopped carrots and stir around. Add peppers and cook until soft. Add chicken back into pan and prepare Stir-fry sauce. Pour sauce over chicken and peppers mixture and cover. Cook until chicken is no longer pink inside.
Serve over white or brown rice.
