Freezing fruits and vegetables while they are in season is a great way to eat healthy all year long while still eating on a budget. Prices on fruits and veggies are low during the summer months so I love to stock up and use those items all year long, especially during the winter when produce is expensive.
Simple Tips for Freezing Fruits and Vegetables
- Step 1. Purchase your produce from your local farmers market or grocery store when they are on sale.
- Step 2. Wash fruits and veggies and allow to dry fully, that way the fruits and veggies don’t turn mushy.
- Step 3. Cut up fruits and veggies into appropriate sized pieces and place on a cookie sheet.
- Step 4. Flash freeze fruits and veggies on a cookie sheet until hard
- Step 5. Place fruits and veggies in a large ziplock bag and squeeze out as much air as possible.
- Step 6. Store in freezer until ready to use.
Quick tip: When you are ready to use the fruits or veggies gently massage the ziplock bag to break up the frozen pieces and you will be able to portion out the amount you need.

I personally like to stock up on and freeze items such as blueberries and strawberries to be used in smoothies and in breads and muffins later.
Red and green peppers are frozen to be used in stir fries and in sauces and I also like to make breakfast items like homemade waffles, breakfast burritos and more.

I used to have access to farm vegetables and did a lot more canning and preserving, but living in the desert and with only 2 of us I just dont do much. Maybe some refrigerator pickled beets.
