Chicken with Fresh Salsa
10 oz grape tomatoes,
halved 1⁄2 yellow bell pepper
finely chopped 2 tablespoons capers, drained
1 tablespoon cider vinegar
11⁄2 teaspoons olive oil
3⁄4 teaspoon dried basil
1⁄8 teaspoon crushed red pepper
1 clove garlic, minced
2 lbs boneless skinless chicken breasts
Combine capers, vinegar, oil, basil, crushed red pepper, and garlic in the Molcajete and mix; add tomatoes abd bell pepper, cover and chill until ready to serve.
Place chicken on T-Fal OptiGrill coated with cooking spray; season with salt and pepper.
Cook until no longer pink.
Top with salsa before serving.
