I am always looking for super simple, family friendly recipes, yet tasty side dishes for dinner and while I love potatoes, sometimes I need a break from mashed potatoes and baked potatoes. That is where Oven Roasted Potatoes make their appearance at the table! Oven Roasted Potatoes are super easy to make, taste great and go well with a variety of dishes. Plus, because they bake in the oven it cuts down on the dinnertime crazy because I can prep everything , get it into the oven and get everything cleaned while they are cooking.
And when I say these are easy to make, I’m not kidding!
Oven Roasted Potatoes
3-5 lbs of potatoes
Note: you can use either red roasted or just plain russet potatoes. I have used both and like both just as much as the other.
Olive oil
Salt and pepper
Any other seasonings you like.
Preheat oven to 350 degrees.
Cut potatoes into small chunks and toss liberally with olive oil.
Spread the potatoes out on to a cookie sheet and season with salt and pepper and any other seasonings you like.
Bake for 30 minutes until crispy and golden brown tossing occasionally so they don’t stick to the cookie sheet.
Serve warm and enjoy!
