Alright everyone, I have a confession….I don’t meal plan!! I’m one of those ladies who doesn’t think about dinner until lunch is over and that has lead to lots of weird dinner combinations and late dinners. My husband has been trying to get me to do a meal plan for years, YEARS I tell you and I always fought it. Well last month when we went to the beach, because I wanted to prepare the majority of our dinners before we left, I actually did a meal plan, breakfast/lunch/dinner everyday–AND, here comes the confession..I LOVED it. I loved having everything laid out for me, I loved being able to look at the plan and know what we were having for dinner all week. It just made everything so much easier….so, as much as I hate to admit it :)–my husband was right….
So, I have decided to start a new series here on NEPA MOM called Meal Plan Mondays. Each Monday I am going to post what my meal plan is for the upcoming week. I hope this will lead to less stress and better dinners. Now let me say, my meal plans are not going to be anything fancy so please don’t judge 🙂

Love this!!!! Thanks so much…. Kinda helps hold me accountable and when I have something on my “to do list”…. There is nothing better than being able to cross it off….and have my meals planned along the way:)

I’m on my second week of preparing my meals for the week in one day. It’s really easy and makes my weeknights less stressful! This week we’re having:
Mon: Sesame orange chicken and soba noodles
Tues: Chicken parm
Wed: Mexican Pasta Casserole
Thurs: 4th of July barbeque, of course
Fri: Pizza with meatball topping
Sat: Chicken with dill cream sauce
Sun: Ground Turkey chili

I precook most of it. I freeze what we are not having tonight or tomorrow. I try not to precook the “carbs” like the soba noodles and pizza crust. For the casserole and the chili, I made the whole thing and froze it right in my Pyrex dishes.
