Swim team is back in full force and as a result my swimmers are snacking often! I swear they are bottomless pits but hey, that’s what happens when you burn every calorie your put in your body! I find that muffins are a great snack any time of day and they are portable too so we can grab some and go when we are on the run.
I decided I wanted to try and make the traditional Blueberry Muffin and bit healthier though and I decided to swap out the oil for some applesauce.
Healthy Blueberry Muffin Recipe
- ¾ cup milk
- ¾ cup applesauce
- 1 egg
- 2 cups flour
- ½ cup sugar
- ½ tsp salt
- 2 tsp baking powder
- 2 cups blueberries ( I use frozen)
- In a large bowl mix milk, applesauce and egg. Add flour, sugar, salt and baking powder and mix, being careful not to over mix. Add blueberries and gently fold in.
- Place in muffins cups and place in preheated 400 degree oven and bake for 20-25 minutes.
- Enjoy!

I wonder what I could use in place of the eggs for this recipe as we have egg allergies in the family. I’ll have to play around with it. Thanks for sharing!
