I love how you can prepare the chicken and marinade the night before or early in the day and then when you are ready for dinner you just put it all in the oven and dinner is ready in no time.
Chicken Marinade
- 3 tablespoons olive oil, divided
- 3 to 4 split chicken breast
- 1 teaspoon garlic powder
- 1 tablespoon balsamic vinegar
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried basil
- ½ teaspoon onion powder
- ¼ teaspoon paprika
Vegetable Marinade
- 2 tablespoons olive oil
- 1 half lemon, juiced (save remaining half to slice as garnish)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 5 red potatoes, scrubbed and cut into large chunks
- 1 red onion, halved and sliced
- 1 (8 ounce) package mushrooms, cleaned
- 1 red bell pepper, seeded and cut in large pieces
Greek Chicken Recipe Preparation Instructions
- Place chicken in a zip-top gallon freezer bag.
- Mix oil, lemon juice, vinegar, and seasonings until well blended. Pour over chicken, Seal bag and refrigerate overnight, turning once.
- When ready to cook, preheat oven to 400 degrees.
- Place vegetables in a large bowl. Mix oil, lemon juice, and seasonings until well blended. Pour over vegetables and toss to coat.
- Remove chicken from marinade and place on baking sheet lined with foil (for easier clean up) and sprayed with non-stick baking spray. Arrange vegetables around the chicken.
- Bake for 1 hour or until chicken reaches an internal temperature of 165 degrees and juices run clear.

The marinade sounds wonderful! I’d probably try this first with boneless skinless thighs, as I prefer that to the breast. Thanks, I do like the Greek flavorings!
