I love how you can prepare the chicken and marinade the night before or early in the day and then when you are ready for dinner you just put it all in the oven and dinner is ready in no time.

Chicken Marinade

  • 3 tablespoons olive oil, divided
  • 3 to 4 split chicken breast
  • 1 teaspoon garlic powder
  • 1 tablespoon balsamic vinegar
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried basil
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika

Vegetable Marinade

  • 2 tablespoons olive oil
  • 1 half lemon, juiced (save remaining half to slice as garnish)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 5 red potatoes, scrubbed and cut into large chunks
  • 1 red onion, halved and sliced
  • 1 (8 ounce) package mushrooms, cleaned
  • 1 red bell pepper, seeded and cut in large pieces

Greek Chicken Recipe Preparation Instructions

  1. Place chicken in a zip-top gallon freezer bag.
  2. Mix oil, lemon juice, vinegar, and seasonings until well blended. Pour over chicken, Seal bag and refrigerate overnight, turning once.
  3. When ready to cook, preheat oven to 400 degrees.
  4. Place vegetables in a large bowl. Mix oil, lemon juice, and seasonings until well blended. Pour over vegetables and toss to coat.
  5. Remove chicken from marinade and place on baking sheet lined with foil (for easier clean up) and sprayed with non-stick baking spray. Arrange vegetables around the chicken.
  6. Bake for 1 hour or until chicken reaches an internal temperature of 165 degrees and juices run clear.

The marinade sounds wonderful! I’d probably try this first with boneless skinless thighs, as I prefer that to the breast. Thanks, I do like the Greek flavorings!

I love watching my teen play golf for his high sch I love watching my teen play golf for his high school team. It truly is where he is comfortable, but a busy day of school AND a winning golf match means one thing—a HUNGRY TEEN! And a hungry teen means you better have a quick snack on hand! When you need something filling and QUICK, nothing is better that a glass of ice-cold milk and a bowl of cereal!

As parents, we are always looking for ways to FUEL THEIR DRIVE with @lehighvalleydairy.

In this back-to-school promotion, Lehigh Valley will award 18 grants ranging from $1,000 to $10,000 to high schools in the communities it serves, including Philadelphia, Scranton, Baltimore and Washington, D.C. Dollars can be used to update a sports field, revamp the school gym, purchase much-needed athletic equipment, or whatever the greatest need is!

You can help your local Scranton area High School win just by:

- Buy Lehigh Valley Milk at your local retailer (Available at retailers like Target and Giant)
- Snap a photo of the receipt - Upload your receipt here: https://fueltheirdrive.com/Lehigh
- And vote for your favorite high school!
- Remember to upload and vote as often as you buy milk - each vote is a chance for the school to win!
