It’s Girl Scout Cookie time and my three little girl scouts have been busy delivering all their cookies to friends and family that ordered from them. Buying cookies from your local girl scout troop is about more than just satisfying your sweet tooth however. Did you know Girl Scouts who participate in cookie sales learn valuable skills such money management, developing budgets, social skills, business ethics and more?
And did you know that when you purchase cookies from a Girl Scout you are helping to fund programs in your community that help with literacy and help troops fund activities such as fields trips, troop get togethers and both day and overnight camps?
Finally, as if the cookie yumminess wasn’t enough, did you know that you can make lots of yummy treats WITH the girl scout cookies? These Girl Scout Cookie Recipes are definitely family friendly recipes so they are sure to keep your kids and yourself, happy!
Peanut Butter Sandwich
1 BOX GIRL SCOUTS PEANUT BUTTER SANDWICH 1 1⁄2 C SEMI SWEET CHOCOLATE CHIPS 1⁄2 C HEAVY WHIPPING CREAM 1 EACH HALF GALLON VANILLA ICE CREAM
• IN A SMALL BOWL MELT CHOCOLATE CHIPS • BLEND HEAVY CREAM AND MELTED CHOCOLATE TOGETHER UNTIL SMOOTH • FOLD IN BROKEN COOKIES • ON NON-STICK WAX PAPER FORM ROUND DISCS AND FREEZE TO SET • PRESS SCOOP OF ICE CREAM BETWEEN EACH DISC TO MAKE SANDWICH
SERVE WITH WARM CARAMEL SAUCE FOR DIPPING
Lemonade Créme
4 OZ MASCARPONE CHEESE 2 OZ GRANULATED SUGAR 2 EGG YOLKS 1⁄4 TSP. GRAND MARINER LIQUOR 1⁄2 CUP WHITE CHOCOLATE
1⁄2 CUP HEAVY WHIPPING CREAM 1 BOX GIRL SCOUT LEMONADES
• IN MEDIUM MIXING BOWL WHIP EGG YOLKS AND SUGAR UNTIL FLUFFY AND PALE YELLOW
• ADD MASCARPONE CHEESE AND MIX UNTIL SMOOTH • ADD GRAND MARINER LIQUOR TO INCORPORATE • ADD MELTED WHITE CHOCOLATE AND FOLD INTO MASCARPONE MIXTURE
AND SET ASIDE. • IN SEPARATE MIXING BOWL WHIP HEAVY CREAM UNTIL HOLDS STIFF PEAK. • FOLD WHIPPED CREAM INTO MASCARPONE MIXTURE. • FOLD IN BROKEN COOKIES.
TO SERVE: FILL 5 OZ RAMEKIN OR GLASS BOWLS. TOP WITH LEMON CURD AND WHITE CHOCOLATE ICE CREAM .
Thin Mint “Shake”
4 EACH THIN MINT COOKIES 1 PINT VANILLA BEAN ICE CREAM 1/2 C WHOLE MILK
• COMBINE ALL INGREDIENTS IN BLENDER AND MIX UNTIL FULLY INCORPORATED
• FILL 4 EACH 2 OZ SHOT GLASS WITH MILK SHAKE AND CARNISH WITH COOKIE
Caramel deLite Coconut Cream Pie
COCONUT CREAM PIE FILLING
3 C. CANNED COCONUT MILK, UNSWEETENED 3 C. WHOLE MILK 1 TEASPOON VANILLA EXTRACT 1 1⁄2 LBS GRANULATED SUGAR
18 WHOLE EGGS 9 OZ CORN STARCH 9 OZ UNSALTED BUTTER 15 SHEETS GELATIN 1 QT HEAVY CREAM
IN A MEDIUM SAUCEPAN BRING MILK, COCONUT MILK, AND VANILLA EXTRACT TO A BOIL.
IN LARGE BOWL WHIP EGGS, SUGAR, AND CORN STARCH TO MAKE A PASTE. SLOWLY ADD HOT MILK TO EGG MIXTURE UNTIL FULLY INCORPORATED.
RETURN MIX TO STOVETOP AND SIMMER FOR 5 MINUTES UNTIL MIXTURE THICKENS, STIRRING OCCASIONALLY TO AVOID LUMPS.
IN LUKEWARE WATER ADD GELTIN SHEETS TO BLOOM AND ADD TO WARM EGG MIXTURE
PUT MIXTURE IN MEDIUM MIXING BOWL ON SLOW SPEED UNTIL COOLED. ADD COLD BUTTER CHUNKS UNTIL INCORPORATED.
IN SEPARATE BOWL WHIP CREAM UNTIL IT HOLDS STIFF PEAK. FOLD WHIPPED CREAM INTO COCONUT MIX AND FILL PREPPARED PIE
SHELL REFRIGARATE PIE OVERNIGHT TO SET.
COCONUT CREAM PIE SHELL
2 BOXES CARAMEL DELITE COOKIES
• USING LARGE CHEF KNIFE CUT COOKIES INTO SMALL PIECES. • PUT COOKIE PIECES IN GLASS BOWL AND IN MICROWAVE FOR 30
SECONDS TO SOFTEN CARAMEL AND MELT CHOCOLATE. • PRESS SOFTEN COOKIE PIECES IN 12” PIE PAN AND REFRIGARATE.
