Well it has gotten colder here in NEPA and it feels like fall so that is going to definately be reflected in my Family Meal Plan for this week.
Plus, on top of that we start back up with swim team clinics this week so we will be at the pool two nights this week during dinnertime, meaning we will be having quick dinners before we head out. I plan on making my easy Pumpkin Pie Dip today to use as a snack all week long.
It goes great with cut up apples and it is a great snack that is filling and healthy. I just put it in a plastic container with a lid and it stores all week in the fridge.
Now on to the Family Meal Plan for this week!
Sunday: I am making homemade Chicken Cutlets and Pasta with Marinara Sauce. I made the sauce last week when I was home for the day and froze it in Ziploc bags to keep in my freezer. I just pulled a bag out of the freezer this morning and it will be ready to heat and serve at dinnertime. The Cutlets are THE EASIEST thing to make and my whole family loves them so they are always a hit!
Monday: This is one of our busy swim nights so we will be eating the leftover pasta and chicken before running out the door.
Tuesday: We have a few appointments on Tuesday in the late afternoon so this will be a crockpot day–probably a roast of some sort, I haven’t had a chance to check out the grocery store sale fliers yet.
Wednesday: Another busy swim night so we are having sandwiches for dinner tonight. For those that don’t want sandwiches we will do Chef salads with the sandwich meat instead.
Thursday: I actually have nothing on the schedule for the entire day and night so I will be making Cheesy Chicken Bundles for dinner. My kids really like these and I will be making a double–maybe triple, batch to put in the freezer. When I get the chance to make extra food to freeze at dinnertime I try to do it. It makes life so much easier when I can reach into the freezer and pull out a homemade, prepared meal that is ready to be defrosted, cooked and served. Do any of you do freezer cooking also?
Friday: Woohoo its Friday and that means PIZZA! Our only decision about dinner on Fridays is do we want square pizza or round pizza? What do you think? Do you have a preference?
Saturday: We will be heading to our local Pumpkin Farm with my daughters Girl Scout Troop so we will be eating dinner at the campfire there. It should be a fun night, I hope it isn’t too cold!

I am jealous – I try to be organized but I have trouble following up on the idea although I realize that it saves money and time by preparing a meal plan. I will try harder.
