Double Chocolate Banana and Chocolate Chip Muffins

  • 1 cup flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 bananas, overripe
  • ½ cup butter
  • ½ cup brown sugar
  • 1 egg
  • 1 Tablespoon vanilla
  • ¼ cup greek yogurt or sour cream
  • 1 cup chocolate chips, or more to personal preference
Instructions
  1. Double Chocolate Banana and Chocolate Chip Muffins Directions
  2. Preheat oven to 350F
  3. Line two muffin trays with muffin liners.
  4. Stir together the flour, cocoa powder, baking soda and salt in a small bowl and set aside.
  5. Using a mixer, combine the butter and brown sugar for 2 minutes until light and well combined. Add an egg, vanilla and sour cream, and mix thoroughly.
  6. Add in the dry ingredients and combine fully, then add the chocolate chips.
  7. Scoop ¼ cup portions of the batter into the muffin liners. Top with more chocolate chips, as desired.
  8. Bake for 20-25 minutes, until an inserted toothpick comes out clean and tops bounce back when tapped.
