Potato, Carrot & Leek Soup
This easy soup Potato Carrot and Leek Soup is ready in minutes and tastes great so it is the perfect addition to your upcoming meal plan!
  • Ingredients:
  • 3 tablespoons of olive oil
  • 1 ½ pounds of potatoes, peeled and diced
  • 4 medium leeks pale parts only, rinsed, and thinly sliced
  • 3 carrots diced into ½ inch chunks
  • 4 cups of vegetable stock
  • 1 tablespoon of fresh chopped parsley
  • 2 teaspoons of dried tarragon
  • salt to taste
  • ground black pepper to taste
  • ½ cup of heavy cream (optional)
  1. Directions:
  2. Heat oil in a large pot over medium high heat. Add in leeks.
  3. Cook for 4-5 minutes. Add in carrots, cook an additional 3-4 minutes.
  4. Add in stock, potatoes, and seasonings.
  5. Cook for 20 minutes or until potatoes are tender. Remove pot from heat. Allow to cool slightly.
  6. In small batches, puree soup in a blender or food processor. Or use an immersion blender, if desired.
  7. Puree to desired consistency.
  8. Return soup to pot and reheat.
  9. Add in cream, if desired, mix, and serve.
