Beef Barley Soup
This Easy Beef Barley soup recipe tastes great and is ready in no time--perfect for cold Fall and Winter nights!
  • 2 large carrots--diced
  • 2 large cans of beef broth
  • 1 lb of beef cubes
  • 2 large potatoes--cubed
  • 1 cup cooked quick-cooking barley
  • olive oil
  • salt and pepper
  1. Sear beef in hot pan with 2 tbsp of olive oil and salt/pepper (you want the bottom of the pan to brown, that's where the flavor is)
  2. Add beef broth, carrots and potatoes and cook until tender
  3. Add barley
  4. Serve and Enjoy!
