Chicken and Pepper Stir Fry with Veetee Rice

- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 lb chicken breast, thinly sliced
- 1 tsp garlic
- 8 tbsp soy sauce
- 2 tbsp white vinegar
- 2 tsp sugar
- 1 tsp crushed red pepper flakes
- ½ tsp olive oil
- Mix together soy sauce, white vinegar, sugar, red pepper flakes and olive oil and put aside.
- In large saute pan add a splash of oil oilve and brown chicken on both sides. Remove to a plate and keep warm.
- Add peppers and cook until desired softness. Add garlic and brown slightly, being careful not to burn garlic.
- Add chicken back into pan, add soy sauce mixture, mix well and cover.
- Cook 7-8 minutes until chicken is cooked through.
- Serve over Veetee rice and enjoy!
