This easy Pumpkin Cupcake Recipe is a great Thanksgiving alternative to pumpkin pie that your kids are sure to love!
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp all spice
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup melted butter, cooled
  • 4 large eggs
  • 1 can Giant brand pumpkin puree
  1. Preheat oven to 350 degrees.
  2. Mix together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and allspice and put aside.
  3. In a different bowl mix brown sugar, sugar, butter and eggs. When combined add in dry ingredients and mix well. Add in pumpkin puree and divide batter into cupcake liners, filling each just over halfway.
  4. Bake 25 minutes or until fully cooked.
  5. Allow to cool completely and then ice with Buttercream icing.
