Apple Blueberry Muffins

These easy muffins are healthy and taste great plus they freeze well so you can make them ahead of time and then just pull them out when you need them! Great for lunches too!
Ingredients
  • ¾ cup milk
  • ¾ cup applesauce
  • 1 egg
  • 2 cups flour
  • ½ cup sugar
  • ½ tsp salt
  • 2 tsp baking powder
  • 2 cups blueberries ( I use frozen)
Instructions
  1. In a large bowl mix milk, applesauce and egg. Add flour, sugar, salt and baking powder and mix, being careful not to over mix. Add blueberries and gently fold in.
  2. Place in muffins cups and place in preheated 400 degree oven and bake for 20-25 minutes.
  3. Enjoy!
