Growing up I spent a lot of time with my great-grandmother and I always loved when she would let me help her bake. I loved being the one to cream together the butter and the sugar, help drop cookies on the cookie sheet and help her make lots of yummy treats. I hold those memories of baking with my great-grandmother very dear and now as an adult, I still love to bake. I love providing my family with tasty, healthy, warm from the oven baked goods– I imagine it was how my great-grandmother felt too. I had some bananas that were browning up on me sitting on the counter so I decided to whip up Easy Banana Muffins for my kids for breakfast.

Easy Banana Muffins
Keep in mind that the size of your bananas matter. For this recipe I used two bananas because they were pretty big but if your bananas are on the smaller size then use three. It does make a difference in how moist your bananas are. Also, a friend asked me how I get my muffin tops so round and the key to that is to not overmix your batter. When you overmix your batter your muffins will form peaks while baking–still yummy, just without those pretty rounded tops.
Now I admit, I am a lazy baker so I tend to take shortcuts whenever I can. I love using my stand mixer to bake with and I just dump everything in the bowl and mix it together all at once. That is what makes this recipe so simple. Everything goes in once and there is only one bowl and one mixer to clean up. So easy!
- ⅓ cup milk
- ⅓ cup vegetable oil
- 1 egg
- 2 cups flour
- ½ cup packed brown sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 medium bananas
- When using a stand mixer just put all ingredients into bowl and mix well, being careful not to over mix. Place batter in muffin tins and bake at 400 degrees for 20-25 minutes. Allow to cool slightly and serve.
- Note: If you are not using a stand mixer then mix all dry ingredients together, add eggs,milk and mashed banana and mix well. Follow instructions for baking.
