This Easy Balsamic Roasted Vegetables Recipe is the perfect easy side dish for weekday dinners and holidays too!

My kids love to have veggies for our side dish at dinner but they all like different things! Some like broccoli, some like cauliflower, some like carrots–you get the idea. One thing they can all agree on though is that roasted vegetables are the perfect way to make them.

Ingredients

  • Frozen vegetables of your choice–we like Broccoli, Cauliflower and Carrots
  • Garlic
  • Olive oil
  • salt and pepper
  • 1/4 cup balsamic vinegar

Directions


Preheat oven to 400 degrees

  • Place frozen vegetables on sheet pan
  • Cover with olive oil (use liberally, you want them to be coated)
  • Add Balsamic Vinegar, garlic, salt and pepper and mix well
  • Bake in a 400 degree oven for 20-15 minutes to desired crispness

    This sounds yummy! My new favorite side dish is green beans (fresh or frozen) liberally sprayed with oil and sprinkled with garlic salt before roasting. I never thought of adding my favorite balsamic vinegar to them. I can not wait to try this. Thanks so much for sharing with us at the Summer Time Fun Linky. Pinned.
