Summer is winding down and today is the day that many of the schools in my area start back up. My Faccebook feed has been full of pictures of kids waiting for the school bus and I just keep thinking how early those kids need to get up, eat breakfast and get out the door!
With such an early start to the day I know that busy moms need some easy and quick breakfast options so I have partnered with CVS/Pharmacy to help you get a healthy, easy and quick breakfast on the table in no time! Even though my kids aren’t rushing out the door in the mornings to school, I have found that the key to a healthy breakfast in our house is to have a plan and to have a variety of breakfast options available to fit everyone’s tastes.
One of our favorite breakfast staples is oatmeal and I love to use Steel Cut Oatmeal in baked goods, like these yummy Strawberry Oatmeal Breakfast Bars. By using the Quick Cook Steel Cut Oatmeal from Gold Emblem Abound, I am upping the health factor to this bars while adding lots of great taste. By planning ahead and making them the night before, I can cut them into squares and I have a great handheld breakfast option for my kids. They taste great, are easy to eat and keep them full all morning long. (Scroll to the bottom of this post for the full recipe)
Quick Cook Steel Cut Oatmeal is also a great breakfast option on its own, I just prepare it with some milk and add a swirl of jelly to add some sweetness and my kids just gobble it up!
Many mornings my kids aren’t real hungry when they wake up so on mornings like that I love to serve them hard boiled eggs. Eggs are great because they they are a great protein source so they keep them full and alert. For a little sweetness, I also like to give them a serving of the Gold Emblem Abound Fuji Apple and Blueberry Clusters. These little bite sized clusters are perfect for breakfast because they are naturally sweet (no added sugar!) and each bag has over a serving of fruit. They are sweet, crunchy and seriously addicting so they go great with the hard boiled egg for a well rounded, quick and easy breakfast.
Finally, let’s be honest, there are days where we just don’t have time to sit and eat breakfast. Whether the alarm went off late or we have appointments to get to or a bus to catch sometimes we just need the kids to eat on the go and this is our favorite on the go breakfast. - 1 cup flour
- ¾ cup packed brown sugar
- dash or salt
- ½ cup butter--cut into small squares
- 2½ Quick cook steel cut oats
- 2 tbsp apple juice
- Fruit Filling
- ¼ cup packed brown sugar
- 2 tbsp flour
- dash of salt
- 4 cups strawberries (coarsely chopped) NOTE: You can use fresh or frozen
- Preheat oven to 375 degreees
- Add flour, brown sugar and salt to food processor and pulse slightly. Add butter and pulse until coarse crumbs form. Add steel cut oats and pulse until mixed.
- Remove 1½ cups of the mixture and set aside. Add apple juice to food processor and pulse until mixture is moistened. Remove from processor and press firmly in the bottom of a 9x13 in pan.
- Mix together dry ingredients for filling until well mixed. Toss gently with strawberries until coated and then spread over the crust. Take remaining crumb mixture and spread over the top of the filling mixture.
- Bake for 35-40 minutes until top is brown and bubbly. Allow to cool completely and cut into bars. Enjoy!
