I am a Project Envolve Ambassador and this post is sponsored by PPL Electric Utilities but as always my opinions are 100% my own. #ProjectEnvolve
Living in a home that is over 100 years old has it advantages but the fact that we don’t have air conditioning can really be tough when it comes to dinnertime in the Summer. We want to eat yummy, summer time foods but we don’t want to heat up the kitchen doing it. One of my families favorite recipes in is this Crock Pot Pulled Pork Recipe.
Many people think that a slow cooker is only good during the winter but it is also a great tool in your summer cooking arsenal. It doesn’t take a lot of effort, it is energy efficient, it doesn’t make your house too hot and it is a great option for when you are out at the pool or the lake all day and you want dinner ready when you get home!
This Crock Pot Pulled Pork Recipe is so easy to do and it tastes great! To shred the pork just take the cooked pork out of your slow cooker and shred it to desired size with two forks, then put back into the slow cooker.
Crock Pot Pulled Pork Recipe
- Pork Roast:
- Pork Roast:
- Pork Roast:
- Place pork into slow cooker and sprinkle with salt, pepper and Worcestershire sauce. Cover with can of coke and cook for 6-8 hours. When fully cooked, remove meat from slow cooker and discard juices.
- Cool pork slightly and shred it using two forks.
- Place back in slow cooker and cover with BBQ sauce and heat until warm. Serve on rolls with pickles and chips on the side.
- BBQ Sauce: (can be prepared in advance and kept in refrigerator for up to 2 weeks)
- Add all ingredients to a sauce pan and simmer, string often until thick. Use as needed.
- NOTE: Depending on how saucy you like your pulled pork you may need to double or triple the batch of BBQ sauce.
Since my house is 120 years old most of my windows on my first floor don’t even open so that means it can get hot in my house quickly! Thankfully I have lots of ceiling fans and I get a good breeze through the front and back doors and over the past 8 years of living here I have figured out what I need to keep my house cool all summer long.
I try and use small appliances like my slow cooker, microwave and grill whenever possible rather then using the oven and stove. I really try to limit my use of my stove and oven during the warmer months. If I am doing some baking or cooking I try and plan ahead so that I am using them during the early morning or late at night when it is naturally cooler out.
I also try to be as energy efficient as possible to make up for the energy used to run the fans in my house. I run my washer and dryer at off peak times, I wash my clothes in cold water whenever possible and I only run my dishwasher when it is full–did you know that you save over 5,000 gallons of water per year using a dishwasher instead of hand washing? Thankfully as a Project Envolve Ambassador I am always learning even more great ways to be energy efficient in all aspects of my life!
