My husband comes from a big Italian family and every Sunday growing up his paternal grandmother would make a big Sunday dinner. It was always some sort of pasta–normally Rigatoni’s, a meat sauce and a chicken dish. When my husband and I started dating we would often go there for dinner and I always loved when she made Chicken Cutlets. One day I asked for the recipe to make them myself, changing it up slightly to make them as chicken tenders. This is the easy Chicken Tender Recipe that I use and when I make it I know that I will get no complaints and have no leftovers!
You can even double the recipe and freeze half so that you have an easy freezer meal too!
Chicken Tender Recipe
- 1 cup flour
- 3 eggs beaten well
- 2 cups Italian bread crumbs
- 1/2 cup parmesan cheese
- 1 lb chicken
- Oil for frying
- coarse salt
Cut chicken into bite sized pieces. Mix Italian bread crumbs and parmesan cheese together. Dredge chicken in flour, then coat with egg and add to the bread crumb/cheese mixture.
Heat oil in large pan over med-high heat. Once hot add chicken to pan and turn frequently until golden brown on all sides and fully cooked inside.
Place cooked chicken on a paper towel lined plate, sprinkle with salt and allow to cool slightly.
While it seems like this recipe has lot of steps it really is supper simple to make and I generally can have it prepped and on the table in around 45 minutes. Add a vegetable and you have a perfect weeknight meal! Yum!

Mmmm good idea. I haven’t had these in a while! I’m sure my Italian husband will appreciate this: Anything pan-fried and coated with parmesan and bread crumbs.
