Do you have some bananas on your counter that are too ripe to eat? Well if so then it is time to make this Easy Banana Bread from Scratch recipe or this Simple Banana Cake Recipe.
My family loves Bananas and it is very rare that we have bananas that get beyond the point of eating…so when we are in the mood for banana bread I have to hide some bananas so they don’t get eaten too soon! Bananas that are black on the outside are perfect for this recipe because they mash up easily and give the banana bread a really wonderful flavor.

This Banana Bread recipe only makes one loaf but I try and double the recipe whenever I make it so that I can put one loaf in the freezer for a snack or easy breakfast down the road. To freeze it all I do is wrap it in saran wrap, then wrap it in tin foil and then place it in a ziploc bag. Then when I want to eat it I just have to remember to set it out on the counter to defrost.
Making this Banana Bread from Scratch recipe even better is that there are no eggs or nuts in it so it is perfect for those who have allergies to nuts and eggs.
Banana Bread from Scratch
Banana Bread from Scratch Ingredients
3 mashed bananas
1 c sugar
1/4 cup butter (melted)
1 tsp baking sode
1 tsp salt
1 1/2 cup flour
1 tsp baking powder
Banana Bread from Scratch Instructions
Combine all ingredients together and mix well ( I use my stand mixer).
Add to a greased loaf pan and bake at 350 degrees for 1 hour.
Remove from pan and allow to cool.
Enjoy!

Hi,
I was worried that the mixed batter looked a little dry, resisted the urge to add a splash of milk and it turned out great in the end.
I added in a bit of almond essence for flavor and did top mine with oats and slivered almonds for a bit of added nutrition.

I did have to use vinegar and baking soda in place of baking powder though because I didn’t have any. Still turned out wonderful!

I’m a nurse at the hospital, and nurses LOVE to eat, so I whipped this up a couple hours before my evening shift, because I didn’t have eggs and just found the first recipe that did not call for eggs, followed the baking instructions and it was ready when I was done getting ready for work! I threw some tinfoil on it and brought it in, and it was gone in an hour! I didn’t even get to try it, but my co workers were ecstatic about it!! Guess I’ll have to make it again so I can try it myself! ahahaha

Thanks Megan for this simple but absolutely delicious recipe. My son has egg allergies and so often egg-free recipes are vegan, “super healthy” (aka tasteless, especially to an 18 y.o. boy), or call for ingredients that mean a special trip to the health food store (ca-ching $$). This is so easy and tasty. I’m having a hard time not eating the whole loaf myself! Looking forward to making more and maybe trying a few additions…. cinnamon, chocolate chips, apple chunks.
